WHITE WINES
- Bianco (Wh, WhSw): Minimum 50% Malvasia del Lazio (locally Malvasia Puntinata); minimum 35% Bellone, Bombino Bianco, Greco, and/or Trebbiano (Giallo and/or Verde); maximum 15% OAWG
- Bellone (Wh): Minimum 85% Bellone + OAWG
- Malvasia Puntinata (Wh): Minimum 85% Malvasia del Lazio + OAWG
ROSATO WINES
- Rosato (Ro): Minimum 50% Montepulciano; minimum 35% Cabernet Franc, Cabernet Sauvignon, Cesanese (Comune and/or di Affile), Sangiovese, and/or Syrah; maximum 15% OARG
RED WINES
- Rosso (Rd, RdSw): Minimum 50% Montepulciano; minimum 35% Cabernet Franc, Cabernet Sauvignon, Cesanese, Sangiovese, and/or Syrah; maximum 15% OARG

Significant Production Rules
- Minimum alcohol level: 11.0% for Romanella Spumante; 11.5% for Rosato; 12.0% for Bianco secco and white varietals; 12.5% (potential) for Bianco amabile; 12.5% for Rosso secco; 13.0% (potential) for Rosso amabile; 13.0% for Riserva
- Residual sugar: Spumante may be brut or extra dry
- Aging: For Bianco, white varietals, Rosato, and Romanella Spumante, minimum approx. 5–6 months (ERD = March 15, V+1); for Rosso, minimum approx. 7 months (ERD = March 31, V+1); for Riserva, minimum 2 years (ERD = November 1, V+2)
