DESSERT AND SPECIALTY WINES
- Vin Santo (Wh, WhSw): Minimum 60% Malvasia Bianca di Candia, Malvasia Bianca Lunga (aka Malvasia del Chianti), and/or Trebbiano Toscano + OAG
- Vin Santo Occhio di Pernice (Ro, RoSw): Minimum 80% Sangiovese + OAG
Significant Production Rules
- Maximum vineyard elevation: 700 m (2,300 ft)
- Grapes must be dried on or off the vine to achieve a minimum sugar level of 270 g/l (27.0%)
- Minimum alcohol level: 10.5% (16.0% potential)
- Aging: Minimum approx. 3 years, including 24 months in caratelli (small barrels; ERD = November 1, V+3)
