WHITE WINES
- Bianco (Wh, WhFr): 40–60% Bombino Bianco; 40–60% Trebbiano; maximum 15% OAWG
- Bombino Bianco (Wh, WhFr): Minimum 85% Bombino Bianco + OAWG
- Falanghina (Wh): Minimum 85% Falanghina + OAWG
- Malvasia Bianca di Candia (Wh): Minimum 85% Malvasia Bianca di Candia + OAWG
- Trebbiano Bianco (Wh): Minimum 85% Trebbiano + OAWG
ROSATO WINES
- Rosato (Ro, RoFr): Minimum 70% Montepulciano; maximum 30% Sangiovese; maximum 15% Malvasia Nera, Merlot, Uva di Troia, and/or OARG

Significant Production Rules
- Minimum alcohol level: 10.5% for Bombino Bianco tranquillo; 11.0% for Bianco, Bombino Bianco frizzante, Falanghina, Malvasia Bianca di Candia, Trebbiano Bianco, Rosato, Novello, and spumanti; 11.5% for rosato varietals, Rosso, and red varietals; 12.5% for Riserva
- Residual sugar: Maximum 10 g/l (1.0%) for Novello
- Aging: For Riserva, minimum 18 months (ERD = June 1, V+2)
