WHITE WINES
- Bianco (Wh): Any proportions of authorized nonaromatic white grapes
- Cortese from subzone Casalese only (Wh): Minimum 85% Cortese + OANWG
ROSATO WINES
- Chiaretto or Ciaret (Ro, Rd): Minimum 85% Barbera, Bonarda, Cabernet Franc, Cabernet Sauvignon, Dolcetto, Freisa, Grignolino, Nebbiolo, and/or Pinot Nero + OANG
RED WINES
- Rosso (Rd): Any proportions of authorized nonaromatic red grapes
- Dolcetto (Rd): Minimum 85% Dolcetto + OANRG
- Freisa (Rd): Minimum 85% Freisa + OANRG
- Nebbiolo (Rd): Minimum 90% Nebbiolo + OANRG
- Novello (Rosso, Dolcetto, Freisa)
- Superiore (Nebbiolo)

Significant Production Rules
- Minimum alcohol level: 10.0% for Bianco; 10.5% for Casalese Cortese and Chiaretto; 11.0% for Rosso, Dolcetto, Freisa, and Novello; 12.0% for Nebbiolo; 12.5% for Superiore
- Aging: For Nebbiolo, minimum 12 months (ERD = November 1, V+1); for Superiore, minimum 18 months, including 6 months in barrel (ERD = May 1, V+2)
