WHITE WINES
- Bianco (Wh, WhFr, WhSw, WhFrSw): Minimum 85% Spergola; maximum 15% Malvasia (maximum 5% Malvasia di Candia Aromatica), Pinot Bianco, Pinot Grigio, and/or Trebbiano
- Chardonnay (Wh, WhFr): Minimum 85% Chardonnay; maximum 15% Pinot Bianco, Pinot Grigio, and/or Pinot Nero
- Malvasia (Wh, WhFr, WhSw, WhFrSw): Minimum 85% Malvasia di Candia Aromatica; maximum 15% Chardonnay, Malvasia Bianca di Candia, Pinot Bianco, Pinot Grigio, and/or Trebbiano

Significant Production Rules
- Grapes for Passito must be dried on or off the vine to achieve a minimum potential alcohol level of 16.0%
- Spumante wines may undergo second fermentation either in bottles or in autoclaves
- 50% of grapes for Novello must undergo carbonic maceration
- Minimum alcohol level: 5.5% for tranquillo versions of Bianco, Spergola, Lambrusco, and Lambrusco Grasparossa (10.5% potential); 5.5% for Spergola spumante and tranquillo versions of Malbo Gentile and Marzemino (11.0% potential); 6.0% for Malvasia spumante (11.0% potential); 7.0% for frizzante versions of Bianco, Malvasia, Spergola, and Lambrusco Grasparossa (10.5% potential); 7.0% for frizzante versions of Malbo Gentile and Marzemino (11.0% potential); 10.0% for Passito (16.0% potential); 10.5% for Malvasia tranquillo, Sauvignon, and Lambrusco Montericco; 11.0% for Chardonnay, Pinot, Sauvignon Riserva, Novello Bianco spumante, Chardonnay spumante, and Pinot spumante; 11.5% for Rosso; 12.0% for Cabernet Sauvignon
- Residual sugar: Spumante can be at any sweetness level, from brut nature (zero dosage) to dolce
- Aging: For Sauvignon Riserva, minimum 18 months, including 6 months in barrel (ERD = July 1, V+2); for Cabernet Sauvignon Riserva, minimum 24 months, including 6 months in barrel (ERD = November 1, V+2); for Passito, minimum 2 years, including 1 year in barrel (ERD = November 10, V+2)
