Styles and Wine Composition
WHITE WINES
- Bianco (Wh): Minimum 75% Chardonnay + OAWG
- Chardonnay (Wh, WhFr): Minimum 90% Chardonnay + OAWG
- Fiano (Wh, WhFr): Minimum 90% Fiano + OAWG
- Malvasia Bianca (Wh, WhFr): Minimum 90% Malvasia + OANWG
- Verdeca (Wh, WhFr): Minimum 90% Verdeca + OAWG
ROSATO WINES
- Rosato (Ro): Minimum 75% Malvasia Nera (di Basilicata, di Brindisi, and/or di Lecce), Negroamaro, and/or Primitivo + OARG
- Rosato Frizzante (RoFr): Minimum 70% Negroamaro + OARG (this may be a typo in the disciplinare referring only to Rosato Spumante)
RED WINES
- Rosso (Rd): Minimum 75% Malvasia Nera, Negroamaro, and/or Primitivo + OARG
- Aleatico (Rd, RdSw): Minimum 90% Aleatico + OARG
- Malvasia Nera (Rd): Minimum 90% Malvasia Nera + OARG
- Primitivo (Rd): Minimum 90% Primitivo + OARG
- Riserva (Rosso)
SPARKLING WINES
- Spumante (WhSp): Minimum 75% Chardonnay + OAWG
- Rosato Spumante (RoSp): Minimum 70% Negroamaro + OARG
Significant Production Rules
- Minimum alcohol level: 11.5% for Bianco, white varietals, Spumante, and Rosato Spumante; 12.5% for Rosato, Rosso, Malvasia Nera, and Riserva; 13.0% for Aleatico (15.0% potential); 13.5% for Primitivo
- Residual sugar: Maximum 10 g/l (1.0%) for Bianco, white varietals, Rosato, Rosso, Malvasia Nera, and Riserva; maximum 18 g/l (1.8%) for Primitivo; spumanti can range from extra brut to extra dry
- Aging: For all non-riserva wines except Primitivo, minimum approx. 2–3 months (ERD = January 1, V+1); for Primitivo, minimum approx. 5 months (ERD = March 31, V+1); for Riserva, minimum 24 months (ERD = November 1, V+2)
