ROSATO WINES
- Rosato (Ro): Minimum 90% Frappato, Nero d’Avola (aka Calabrese), and/or Perricone + OAG
RED WINES
- Rosso (Rd): Minimum 90% Frappato, Nero d’Avola, and/or Perricone + OAG
- Rosso from subzone Pachino only (Rd): Minimum 80% Nero d’Avola; maximum 20% Frappato and/or Perricone
- Frappato (Rd): Minimum 90% Frappato + OAG
- Nero d’Avola (Rd): Minimum 90% Nero d’Avola + OAG
- Pignatello (Rd): Minimum 90% Perricone + OAG
- Riserva (Rosso Pachino)

Significant Production Rules
- Minimum alcohol level: 11.5% for Rosato; 12.0% for all reds
- Aging: For Pachino Rosso, minimum approx. 5 months (ERD = April 1, V+1); for Pachino Riserva, minimum 2 years, including 6 months in barrel (ERD = October 15, V+2)
