WHITE WINES
- Bianco (Wh): Minimum 50% Trebbiano Toscano + OAWG (maximum 10% Malvasia)
- Chardonnay (Wh): Minimum 85% Chardonnay + OAWG
- Grechetto (Wh): Minimum 85% Grechetto + OAWG
- Pinot Grigio (Wh): Minimum 85% Pinot Grigio + OAWG
- Trebbiano (Wh): Minimum 85% Trebbiano Toscano + OAWG
ROSATO WINES
- Rosato (Ro): Minimum 50% Sangiovese + OARG
RED WINES
- Rosso (Rd): Minimum 50% Sangiovese + OARG

Significant Production Rules
- Maximum vineyard elevation: 450 m (1,475 ft) for red grapes; 500 m (1,640 ft) for white grapes
- Spumante wines may undergo second fermentation either in bottles or in autoclaves
- For Vin Santo, grapes must be air-dried to achieve a minimum sugar level of 260 g/l (26.0%) and must be pressed by March 31, V+1
- Minimum alcohol level: 11.0% for Bianco, Chardonnay, Pinot Grigio, Trebbiano, and Spumante; 11.5% for Grechetto, Rosato, Rosso, and Novello; 12.0% for red varietals; 13.0% for Vin Santo (16.0% potential)
