- Bianco (Wh): Minimum 85% Vernaccia di San Gimignano + OANWG (maximum 10% Riesling and/or Sauvignon Blanc)
- Riserva (Bianco)
Significant Production Rules
- Maximum vineyard elevation: 500 m (1,640 ft)
- Minimum alcohol level: 11.5% for Bianco; 12.5% for Riserva
- Residual sugar: Maximum 4 g/l (0.4%)
- Aging: For Riserva, minimum 11 months, including 3 months in bottle (ERD = December 1, V+1)
