- da Uve Stramature (Vendemmia Tardiva; WhSw): Minimum 90% Moscato Bianco + OAWG
- Passito (WhSw): Minimum 90% Moscato Bianco + OAWG

Significant Production Rules
- Grapes for Passito must be dried on or off the vine to achieve a minimum level of 272 g/l (27.2%)
- Minimum alcohol level: 8.0% for Spumante (11.5% potential); 12.0% for Bianco (14.0% potential); 12.0% for da Uve Stramature (15.0% potential); 12.0% for Passito (16.0% potential)
- Residual sugar: 50–95 g/l (5.0–9.5%) for Spumante
- Aging: For Spumante, minimum approx. 1 month (ERD = October 15, V); for Bianco, minimum approx. 6 months (ERD = March 1, V+1); for da Uve Stramature and Passito, minimum approx. 5–6 months (ERD = July 1, V+1)
