WHITE WINES
- Bianco (Wh, WhFr): 40–60% Trebbiano Toscano; minimum 30% Chardonnay and/or Pinot Bianco; maximum 25% Bianco di Alessano and/or Sauvignon Blanc; maximum 10% Malvasia Lunga Bianca
ROSATO WINES
- Rosato (Ro, RoFr): 60–80% Negroamaro; maximum 40% Bombino Nero, Montepulciano, Pinot Nero, and/or Sangiovese; maximum 10% Malvasia Nera
- Negroamaro (Ro): Minimum 85% Negroamaro; maximum 15% Malvasia Nera, Montepulciano, Pinot Nero, and/or Sangiovese
- Novello (Rosato)
RED WINES
- Rosso (Rd, RdFr): 60–80% Negroamaro; maximum 40% Bombino Nero, Montepulciano, Pinot Nero, and/or Sangiovese; maximum 10% Malvasia Nera

Significant Production Rules
- Some of the grapes for Novello must undergo carbonic maceration
- Minimum alcohol level: 10.5% for Bianco; 11.5% for Rosato, Rosso, and Spumante; 12.0% for Malvasia Nera, Negroamaro, and Rosato Spumante; 13.0% for Superiore
- Aging: For Novello, less than 1 month (ERD = November 6, V); for Superiore, minimum approx. 13 months (ERD = November 30, V+1)
