- Varietals (Ro, RoFr, RoSw, RoFrSw): Minimum 85% of any one of the allowed red grape varieties except Nero d’Avola (Calabrese) + OARG

Significant Production Rules
- Zone of production: Entire region of Sicilia
- Grapes for Passito may be dried slightly on or off the vine
- Minimum alcohol level: 9.0% for all frizzante wines; 10.0% for Vendemmia Tardiva (13.0% potential); 10.5% for Bianco tranquillo, Rosato tranquillo, Spumante, and Rosato Spumante; 11.0% for Rosso tranquillo and Novello; 15.0% for Liquoroso; 16.0% potential for Passito
- Residual sugar: Spumante and Rosato Spumante can range from extra brut to dolce; minimum 50 g/l (5.0%) for Passito
- Aging: No minimums specified
