Significant Production Rules

  • Maximum vineyard elevation: 450 m (1,475 ft) for red grapes; 500 m (1,640 ft) for white grapes
  • Spumante wines may undergo second fermentation either in bottles or in autoclaves
  • For Vin Santo, grapes must be air-dried to achieve a minimum sugar level of 260 g/l (26.0%) and must be pressed by March 31, V+1
  • Minimum alcohol level: 11.0% for Bianco, Chardonnay, Pinot Grigio, Trebbiano, and Spumante; 11.5% for Grechetto, Rosato, Rosso, and Novello; 12.0% for red varietals; 13.0% for Vin Santo (16.0% potential)
  • Aging: No minimums specified
