Significant Production Rules
- For Passito, grapes must be air-dried to achieve a minimum sugar level of 270 g/l (27.0%) and can be pressed only between October 10, V, and March 31, V+1
- Minimum alcohol level: 11.5% for Rosato and Novello; 12.0% for Rosso; 12.5% for Riserva; 13.0% for Superiore; 14.0% for Passito (16.0% potential)
- Residual sugar: Maximum 6 g/l (0.6%) for Novello; minimum 50 g/l (5.0%) for Passito
- Aging: For Rosso, minimum 40 days in bottle (ERD approx. January 1, V+1); for Passito, minimum 6 months, including 3 months in bottle (ERD = November 1, V+1); for Superiore and Riserva, minimum 2 years, including 6 months in bottle (ERD = January 1, V+3)
