Styles and Wine Composition

WHITE WINES
  • Bianco (Wh): Minimum 80% Chardonnay and/or Malvasia + OAWG
  • Chardonnay (Wh): Minimum 90% Chardonnay + OANWG
  • Fiano (Wh): Minimum 90% Fiano + OANWG
  • Malvasia Bianca (Wh): Minimum 90% Malvasia + OANWG
  • Sauvignon (Wh): Minimum 90% Sauvignon Blanc + OANWG
ROSATO WINES
  • Rosato (Ro): Minimum 70% Negroamaro + OARG
  • Negroamaro (Ro): Minimum 85% Negroamaro + OARG
RED WINES
  • Rosso (Rd): Minimum 70% Negroamaro + OARG
  • Negroamaro (Rd): Minimum 85% Negroamaro + OARG
  • Susumaniello (Rd): Minimum 85% Susumaniello + OARG
  • Novello (Rosso)
  • Riserva (Rosso, Negroamaro)
SPARKLING WINES
  • Spumante (WhSp, RoSp): Can be made by a second fermentation of Bianco, Rosato, Negroamaro Rosato, or any of the white varietals

Significant Production Rules

  • Spumante wines may undergo second fermentation either in bottles or in autoclaves
  • Minimum alcohol level: 11.0% for Bianco and white varietals; 11.5% for Spumante; 12.0% for Rosato, Rosso, Negroamaro, and Susumaniello; 12.5% for Riserva
  • Residual sugar: Maximum 10 g/l (1.0%) for all wines except Novello and Spumante; 30 g/l (3.0%) for Novello; Spumante can range from extra brut to extra dry
  • Aging: For Riserva, minimum 2 years (ERD = November 1, V+2)
