SPARKLING WINES
- Spumante (WhSp): Any proportions of Chardonnay, Pinot Bianco, and/or Pinot Nero
- Rosé Spumante (RoSp): Any proportions of Chardonnay, Pinot Bianco, and/or Pinot Nero
- Millesimato (vintage-dated Spumante)
- Riserva (Spumante)
Significant Production Rules
- Maximum vineyard elevation: 700 m (2,300 ft)
- All wines must undergo second fermentation in bottles (Metodo Classico)
- Minimum alcohol level: 11.5%, except 12.0% for Riserva
- Residual sugar: Spumante, Rosé Spumante, and Millesimato can range from natural (zero dosage) to dry; Riserva can range from natural to brut
- Aging: For nonvintage Spumante and for Rosé Spumante, minimum 12 months on the lees (ERD approx. October 1, V+1); for Millesimato, minimum 24 months on the lees (ERD approx. October 1, V+2); for Riserva, minimum 36 months on the lees (ERD approx. October 1, V+3)
