  • Bianco (Wh, WhFr, WhFrSw): Any proportions of white grape varieties approved for the provinces of Bari, Brindisi, and Taranto
  • Varietals (Wh, WhFr, WhFrSw): Minimum 85% Bianco di Alessano, Bombino Bianco, Chardonnay, Falanghina, Fiano, Greco, Malvasia, Manzoni Bianco, Maresco, Marchione, Minutolo, Montonico Bianco, Moscatello Selvatico, Moscato, Notardomenico, Pampanuto, Pinot Bianco, Pinot Grigio, Riesling, Sauvignon Blanc, Semillon, Sylvaner Verde, Verdeca, Verdicchio, Vermentino, or Welschriesling + OAG

Significant Production Rules

  • Zone of production: Communes of Alberobello and Locorotondo in the province of Bari; Ceglie Messapico, Cisternino, Fasano, and Ostuni in the province of Brindisi; and Crispiano and Martina Franca in the province of Taranto
  • Grapes for Passito may be dried slightly on or off the vine
  • Minimum alcohol level: 9.5% for Bianco frizzante and Bianco Spumante; 10.5% for Bianco tranquillo, Rosato frizzante, and Rosso frizzante; 11.0% for Rosato tranquillo, Rosato Spumante, Rosso Spumante, and Novello; 11.0% for Passito (15.0% potential); 11.5% for Rosso tranquillo; 12.0% for da Uve Stramature (15.0% potential)
  • Residual sugar: Spumante wines can range from secco (dry) to amabile (semisweet)
  • Aging: No minimums specified
