- Varietals (Wh, WhFr, WhSw, WhFrSw): Minimum 85% Bombino Bianco, Chardonnay, Famoso, Garganega, Grechetto Gentile, Malvasia (Bianca di Candia or di Candia Aromatica), Manzoni Bianco, Montù, Moscato, Müller-Thurgau, Pinot Bianco, Riesling, Sauvignon Blanc, Trebbiano (Romagnolo, Toscano), or Welschriesling + OANWG
- Dual varietals (Wh, WhFr, WhSw, WhFrSw): Minimum 50% of first-named variety; maximum 50% of other variety

- Residual sugar: Spumante wines can be produced at any sweetness level, from brut nature (zero dosage) to dolce
