WHITE WINES
  • Bianco (Wh): Minimum 50% Grechetto + OAWG
  • Grechetto (Wh): Minimum 85% Grechetto + OANWG
  • Superiore (Grechetto)
RED WINES
  • Rosso (Rd): Minimum 50% Sangiovese + OARG
  • Merlot (Rd): Minimum 85% Merlot + OARG
  • Sangiovese (Rd): Minimum 85% Sangiovese + OARG
  • Superiore (Rosso, Merlot, Sangiovese)
DESSERT AND SPECIALTY WINES
  • Grechetto Passito (WhSw): Minimum 85% Grechetto + OANWG

Significant Production Rules

  • Vineyard elevation: Minimum 150 m (490 ft); maximum 600 m (1,970 ft)
  • Minimum alcohol level: 11.5% for Bianco; 12.0% for Grechetto, Rosso, and red varietals; 12.0% for Passito (16.0% potential); 12.5% for all Superiore wines
  • Aging: For Grechetto Superiore, minimum 5 months (ERD = April 1, V+1); for Grechetto Passito, minimum 10 months (ERD = September 1, V+1); for Rosso Superiore, Merlot, and Sangiovese, minimum 12 months (ERD = November 1, V+1); for Merlot Superiore and Sangiovese Superiore, minimum 18 months (ERD = May 1, V+2)
  • Varietal wines may be labeled as “Grechetto di Todi DOC,” “Merlot di Todi DOC,” or “Sangiovese di Todi DOC,” as appropriate
