WHITE WINES
  • Bianco (Wh, WhFr, WhSw, WhFrSw): Any proportions of white grape varieties approved for the provinces of Trento or Verona
  • Varietals for the province of Trento only (Wh, WhFr, WhSw, WhFrSw): Minimum 85% of any one of the white grape varieties allowed for the province of Trento except Pinot Grigio + OANWG
  • Varietals for the province of Verona only (Wh, WhFr, WhSw, WhFrSw): Minimum 85% Bianchetta Trevigiana, Chardonnay, Grüner Veltliner, Manzoni Bianco, Moscato Giallo, Müller-Thurgau, Nosiola, Pinot Bianco, Riesling, Trebbiano Toscano, or Welschriesling + OAWG
  • Dual varietals (Wh, WhFr, WhSw, WhFrSw): 50–85% of first-named variety; 15–50% of other variety
ROSATO WINES

Significant Production Rules

  • Zone of production: Defined area in the provinces of Trento and Verona
  • Spumante must be fermented in autoclaves (pressurized tanks)
  • Minimum alcohol level: 6.0% for Moscato Giallo Spumante (11.0% potential); 9.0% for most wines; 10.5% for sparkling wines (11.0% potential); 11.0% for Novello
  • Residual sugar: Sparkling wines can range from secco to dolce
  • Aging: No minimums specified
