- Bianco (Wh): 100% Erbaluce
ROSATO WINES
- Rosato (Ro): Minimum 60% Barbera, Bonarda, Freisa, Nebbiolo, Neretto di Bairo, and/or Uva Rara (locally Bonarda di Cavaglià) + OANG
RED WINES
- Rosso (Rd): Minimum 60% Barbera, Bonarda, Freisa, Nebbiolo, Neretto di Bairo, and/or Uva Rara + OANG
- Barbera (Rd): Minimum 85% Barbera + OANRG
- Nebbiolo (Rd): Minimum 85% Nebbiolo + OANRG
- Novello (Rosso)
- Riserva (Rosso)
SPARKLING WINES
- Spumante (WhSp): 100% Erbaluce

Significant Production Rules
- Vineyard elevation: Minimum 200 m (660 ft); maximum 600 m (1,970 ft)
- Minimum alcohol level: 10.0% for Bianco; 10.5% for Rosato, Rosso, and Barbera; 11.0% for Nebbiolo, Spumante, and Novello
- Residual sugar: Spumante may be brut or extra dry
- Aging: No minimums specified
