Styles and Wine Composition

WHITE WINES
  • Bianco (Wh, WhFr, WhSw, WhFrSw): Any proportions of grape varieties approved for the relevant province except Moscato Giallo
  • Varietals for the province of Belluno only (Wh, WhFr, WhSw, WhFrSw): Minimum 85% any one of the allowed white grape varieties except Bianchetta Trevigiana + OANWG
  • Varietals for the province of Bolzano only (Wh, WhFr, WhSw, WhFrSw): Minimum 85% any one of the allowed white grape varieties except Gewürztraminer, Riesling, Veltliner, and Welschriesling + OANWG
  • Varietals for the province of Trento only (Wh, WhFr, WhSw, WhFrSw): Minimum 85% any one of the allowed white grape varieties except Gewürztraminer, Riesling, Trebbiano Toscano, Veltliner, and Welschriesling + OANWG
  • Dual varietals (Wh, WhFr, WhSw, WhFrSw): 50–85% of first-named variety; 15–50% of other variety
ROSATO WINES
  • Rosato (Ro, RoFr, RoSw, RoFrSw): Any proportions of grape varieties approved for the relevant province except Moscato Rosa
  • Varietals and dual varietals (Ro, RoFr, RoSw, RoFrSw): Same as Rosso varietals
RED WINES
  • Rosso (Rd, RdFr, RdSw, RdFrSw): Any proportions of grape varieties approved for the relevant province except Moscato Rosa
  • Varietals (Rd, RdFr, RdSw, RdFrSw): Minimum 85% any one of the allowed red grape varieties except Lagrein for the province of Bolzano only and Marzemino, Negrara, and Pinot Meunier for the province of Trento only + OANRG
  • Dual varietals (Rd, RdFr, RdSw, RdFrSw): 50–85% of first-named variety; 15–50% of other variety
  • Novello (Rd): Any proportions of grape varieties approved for the relevant province except Moscato Rosa; for the province of Bolzano only, Novello must have a “prevalence” of Lagrein; for the province of Trento only, Novello must have a “prevalence” of Lagrein and/or Teroldego
SPARKLING WINES
  • Bianco Spumante (WhSp, WhSpSw): Any proportions of Chardonnay, Müller-Thurgau, Pinot Bianco, Pinot Grigio, and/or Pinot Nero
  • Spumante del tipo aromatico (WhSp, WhSpSw): 100% Moscato Giallo
  • Rosato Spumante (RoSp, RoSpSw): Any proportions of Chardonnay, Müller-Thurgau, Pinot Bianco, Pinot Grigio, and/or Pinot Nero
  • Dual varietals are allowed
DESSERT AND SPECIALTY WINES
  • Bianco Passito (Wh, WhSw): Any proportions of grape varieties approved for the relevant province except Moscato Giallo
  • Rosato Passito (Ro, RoSw): Any proportions of grape varieties approved for the relevant province except Moscato Rosa
  • Rosso Passito (Rd, RdSw): Any proportions of grape varieties approved for the relevant province except Moscato Rosa

Significant Production Rules

  • Zone of production: Provinces of Bolzano and Trento in the region of Trentino–Alto Adige, and the province of Belluno in the region of Veneto
  • Spumante must be fermented in autoclaves (pressurized tanks)
  • Minimum alcohol level: 10.0% for most wines, except 6.0% for Moscato Giallo spumante (11.0% potential), 9.0% for Moscato Giallo frizzante, 10.5% for nonaromatic spumante (11.0% potential), 11.0% for Novello, and 16.0% potential for Passito
  • Residual sugar: Spumante wines can range from secco (dry) to dolce (sweet)
  • Aging: No minimums specified
