  • Pinot Grigio (Wh): Minimum 85% Pinot Grigio + OANWG

Significant Production Rules

  • Grapes for Torcolato must be dried on or off the vine to achieve a minimum potential alcohol level of 14.0% and must be pressed no later than the end of February, V+1
  • Minimum alcohol level: 11.0% for Bianco, Rosso, all varietals, and Spumante; 12.0% for Superiore; 14.0% for Torcolato
  • Residual sugar: Maximum 35 g/l (3.5%) for Spumante; minimum 35 g/l (3.5%) for Torcolato
  • Aging: For Torcolato, minimum approx. 1 year (ERD = December 31, V+1); for Riserva, minimum 2 years (ERD = November 1, V+2)
